  • 1 loaf thick-cut bread (like challah or brioche), cut into cubes
  • 4 ripe bananas, sliced
  • 6 large eggs
  • 2 cups milk
  • 1/2 cup heavy cream
  • 1/2 cup granulated sugar
  • 1 tablespoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt
  • Powdered sugar for serving
  • Maple syrup for serving

Method
 

  1. Prep the Bread: Preheat the oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish.
  3. Place the cubed bread in the dish and layer the sliced bananas on top.
  4. Make the Custard: In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.
  5. Combine: Pour the custard mixture evenly over the bread and bananas, pressing down gently to ensure the bread absorbs the liquid.
  6. Cover with plastic wrap and refrigerate for at least 30 minutes or overnight.
  7. Bake: Remove the casserole from the refrigerator and let it sit at room temperature for 10 minutes.
  8. Bake in the preheated oven for 45-50 minutes, or until the top is golden brown and the custard is set.
  9. Serve: Allow to cool slightly before dusting with powdered sugar. Serve warm with maple syrup.
