  • 1 cup cup cooked rice or quinoa
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup diced tomatoes (fresh or canned)
  • 1 avocado diced
  • 1 teaspoon teaspoon chili powder
  • 1 teaspoon teaspoon cumin
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)
  • Sour cream or Greek yogurt for serving (optional)
  • Shredded cheese for serving (optional)

Method
 

  1. Cook the Beef: In a large skillet over medium heat, add the ground beef.
  2. Cook until browned, breaking it apart with a spatula, about 5-7 minutes. Drain excess fat if necessary.
  3. Season the Beef: Add chili powder, cumin, salt, and pepper to the beef.
  4. Stir well to combine and cook for another 2-3 minutes until the spices are fragrant.
  5. Prepare the Base: While the beef is cooking, prepare the rice or quinoa according to package instructions.
  6. Assemble the Bowl: In serving bowls, layer the cooked rice or quinoa, followed by the seasoned ground beef, black beans, corn, diced tomatoes, and avocado.
  7. Garnish and Serve: Top with chopped cilantro, sour cream, and shredded cheese if desired. Serve immediately.
