Method
 

  1. Cook the Orzo: In a large pot of boiling salted water, cook the orzo according to package instructions until al dente.
  2. Drain and set aside.

  5. Add the shrimp and cook for 2-3 minutes until pink and cooked through.
  6. Add Spinach: Stir in the fresh spinach and cook until wilted, about 1-2 minutes.
  7. Combine: Add the cooked orzo to the skillet, along with lemon zest, salt, and pepper.
  8. Toss everything together until well combined.
  9. Finish with Feta: Remove from heat and stir in the crumbled feta cheese.
  10. Adjust seasoning if necessary.
  11. Serve: Garnish with fresh parsley if desired and serve warm.
